The payment can either be a fixed sum of Money or a fixed percentage out of each players Buy-In for entering the Tournament, usually no more than 10%.
For Example, Poker Tournaments are played with Chips that only have a value within the played Tournament. So players can enter a $50 Poker Tournament and receive 1000 Chips each for playing, but only $45 out of the $50 each Player paid to enter the Tournament would be added to the main Tournament Pot and $5 will go as a fee to the Casino.
